Our award-winning rack of lamb is a delicate and highly presentable cut taken from the saddle, perfect for special occasions where culinary elegance is essential. Our butchers take pride in expertly cutting and French-trimming the rack, making it suitable for serving as a 'Guard of Honour' or 'Crown Roast' style. Our favourite preparation involves a simple herb crust, pan-roasted to render the fat, then roasted, rested, and sliced into cutlets, served with seasonal vegetables and a red wine sauce. This exquisite cut was honored with 2 Stars at the 2019 Great Taste Awards.

This diet creates meat with a healthy covering of fat and marbling throughout, producing tender roasting joints, succulent centrepieces, and quick-cooking steaks.
