Our award-winning rack of lamb is a delicate and highly presentable cut taken from the saddle, perfect for special occasions where culinary elegance is essential. Our butchers take pride in expertly cutting and French-trimming the rack, making it suitable for serving as a 'Guard of Honour' or 'Crown Roast' style. Our favourite preparation involves a simple herb crust, pan-roasted to render the fat, then roasted, rested, and sliced into cutlets, served with seasonal vegetables and a red wine sauce. This exquisite cut was honored with 2 Stars at the 2019 Great Taste Awards.

At Soil and Sea, we partner with small, local sheep farms exclusively dedicated to us. Our farms raise various breeds, including Scottish Blackface ewes and Manx Loaghtan sheep, which are 100% grass-fed. Grazing freely on organic pastures across picturesque rolling hills, our lambs enjoy a natural and nourishing clover-rich diet. This diet creates meat with a healthy covering of fat and marbling throughout, producing tender roasting joints, succulent centrepieces, and quick-cooking steaks.
