Our Organic Lamb

At Soil and Sea, all of our lamb and mutton is grass fed for life and certified organic by the Soil Association. We work with a handful of small, local sheep farmers who breed a variety of organic sheep, from Scottish Blackface Ewes to Manx Loaghtan Sheep. These sheep and their lambs are 100% grass fed and spend the majority of their lives outdoors, as nature intended. The friendly sheep and bouncy lambs graze freely on organic pastures, roaming the fields of Dartmoor.

 

Their digestive systems are designed specially for pasture, and their clover rich diet produces a healthy covering of fat and marbling throughout on the final cut. This only boosts the flavour of our organic lamb and mutton, which makes a meltingly soft roast and succulent centrepiece.

Festive Stuffed Shoulder of Lamb

Only available at Christmas, our organic lamb shoulder is infused with a delicious, organic sage and onion stuffing for a fantastic Christmas dinner centrepiece. The combination of tender, organic and grass fed lamb with the flavoursome sage and onion stuffing creates a taste sensation that will go down a treat. Our Festive Stuffed Shoulder of Lamb is carefully created by our traditionally trained butchers on our Devon farm for an easy to carve, family favourite. What’s more the organic stuffing is gluten free, keeping gluten out of our butchery and all of our organic meat 100% free from gluten.

 

Smoked Leg of Lamb

For a festive lunch with a twist, try our organic, grass fed Smoked Leg of Lamb. Our organic lamb leg is smoked slowly over oak chips for a soft, natural smoke that perfectly complements the sweet and tender meat. This Christmas special is traditionally butchered by hand before smoking on the Soil and Sea farm. Delicious when covered with a rich onion gravy and a sprinkling of fresh mint for a real Christmas crowd pleaser.

Whole Leg of Lamb

For a little more of a traditional joint, choose our Whole Leg of Lamb this Christmas. This classic roasting joint is best roasted low and slow for fall-off-the-bone meat of organic, grass fed lamb. This joint also works well with a rich gravy (perhaps with a hint of festive cranberry) and a dashing of mint. Up for a challenge? Try our leg of lamb recipe, roasted with mint and lemon, and add something different to our classic leg of organic lamb.

 

Lamb Leg (Bone In)

Having a slightly smaller celebration? Opt for our Lamb Leg (Bone In) to keep all the taste of our Whole Leg of Lamb at a slightly more manageable size. Keeping its classic status, this succulent and tender cut is from organic, grass fed lamb, only adding to the flavour and texture. We recommend pairing with garlic and rosemary for an unbeatable Christmas Day lunch.

 

Lamb Leg Boned & Rolled

A great choice for those less confident in their culinary skills, our organic Lamb Leg Boned & Rolled is carefully butchered by our skilled team here on the farm. A wonderful roasting joint, our boned and rolled leg of lamb is incredibly easy to cook and carve. For a tasty twist, try stuffing with apricots, garlic and fresh herbs before roasting.
